For long-aged cheeses, the farm has a ripening chamber. In which a constant temperature of 10-12 degrees above zero is maintained with enhanced air ventilation and the presence of a dehumidifier. The storage is quite large, where there are several rooms with certain types of cheeses. In total, there were about 3 tons of cheese in storage at the time of filming.
There is also a special chamber where cheeses with white mold ripen.
Before packing the cheese, a tasting of the batch is carried out in a mandatory order in order to exclude marriage. All cheeses are packed in craft paper, sliced ​​cheese is vacuum packed.
