@BeltaPlus Today we are sharing a healthy snack recipe for vegetable muffins, a healthy alternative to regular butter sandwiches. Cooking will not require much time and effort, and the result will certainly please you. Ingredients: 6 chicken eggs;
1 bell pepper, chopped;
1 medium onion, chopped;
1/2 cup (120 ml)
MILK 50 g fresh spinach, chopped (you can use frozen);
100 g goat cheese;
2 tablespoons of
OLIVE OIL;
SALT and pepper to your taste;
2-3 green onions for serving.
Cooking technique: Heat the oven to 170°C.
Heat olive oil in a frying pan.
Add finely chopped red pepper and onion, salt and pepper. Cook for 6-8 minutes, covered and stirring occasionally. Remove the skillet from the heat.
Whisk eggs,
milk in a large bowl, 1/4 teaspoon salt and 1/8 teaspoon pepper. Add fresh spinach and fried red pepper and onion to the egg mixture, mix until smooth.
Pour batter into muffin tins, top with goat cheese and bake for 20-25 minutes.
Let cool for 5 minutes. Take the cupcakes out of the molds, garnish with chopped green onions.
