Since Belarus has fully provided domestic demand for food products in a wide range and with guaranteed quality, the task is to offer a new line for children and the elderly, pregnant women and nursing mothers, athletes and people in need of special food - dietary, medicinal and therapeutic and prophylactic. Gordey Gusakov, DIRECTOR of the Institute of MEAT and Dairy Industry of the Research and Production Center of the National Academy of Sciences of Belarus for Food, Candidate of Economic Sciences Gordey Gusakov, told about this in an interview with the journal "Economics of Belarus", BelTA informs.
The institute carried out complex scientific and practical work related to the technologies for making ice cream and curd cheeses with a reduced carbohydrate content and a minimum calorie content, in which the effect of sweeteners on their quality and shelf life of these products was studied. Based on the results of the research, unified technical requirements for a new assortment were established and prescription compositions were developed with a reduced mass fraction of fat (up to 5% inclusive), with the replacement of SUGAR with modern low-calorie sweeteners (maltitol, erythritol and others) and with a content reduced by 30% or more. for nutrition of different age groups.
The technology for the production of such types of ice cream has been introduced at Molochny Mir JSC , TPKUP Minsk Khladokombinat No. 2, Kobrinsky Butter and CHEESE FACTORY JSC, and the production of new types of curd masses and cheese curds has been launched at Mozyr Dairy Products KPUE and Vitebsk Moloko JSC ".
"Technologies for the production of low-lactose and lactose-free dairy products for people suffering from lactose deficiency are being developed. They need to limit the consumption of traditional dairy products and adhere to an appropriate diet that excludes or reduces MILK sugar in the diet. Such food is especially relevant for children when the child's growing body needs a full and a balanced diet, and the exclusion of dairy products from the diet can cause a number of diseases," said Gordey Gusakov.
The Institute of the Meat and Dairy Industry has also developed a universal low-protein dry milk product recommended as a dietary therapy for hereditary metabolic disorders, for example, in type 1 phenylketonuria and homocystinuria, in the complex treatment of kidney or liver diseases, chronic renal failure and diabetes mellitus. 2nd type. it can be used to prepare a fermented milk product using dry starter for making yogurt at home.
