In the Moscow region, technologies for the production of frozen vegetables are being developed, increasing the possibility of maximizing the preservation of vitamins for a long time. Thus, the Miratorg company produces vegetable mixtures in the Domodedovo district of the Moscow region.
“In 2021 and 2022, in total, the company produced over 25 thousand tons of vegetable and berry mixtures. There are more than 30 types of these products in the assortment. In addition to the classic mixtures, they also produce the Farm Products line - these are hearty vegetable mixtures, which include freshly frozen herbs such as parsley, dill and basil,” said Georgy Filimonov, Deputy Chairman of the Government of the Moscow Region in charge of the Ministry of Agriculture and Food.
Now a novelty has appeared on the shelves - frozen blackcurrant, which, in anticipation of a new harvest, will become a natural source of vitamin C.
“The increase in demand for mixtures is influenced by the growing literacy of the consumer, who understands that modern freezing methods allow preserving most of the vitamins in vegetables,” added the Deputy Chairman.
All processes at the plant near Moscow for the production of vegetable mixtures are automated. Robots do most of the work for humans. Thanks to automation, there is no contact between people and products, which ensures sterility and eliminates the risks associated with the human factor. Products are produced mainly from own raw materials. The vegetables themselves are grown in the Tula region in the open field. They are selected according to certain criteria: calibrated raw materials, without damage and color changes.
Most vegetables need to be blanched before freezing. This is hot steam treatment in special industrial double boilers, followed by rapid cooling, which further reduces the cooking time of various dishes. Raw materials are frozen using the "shock" freezing method, which allows you to preserve the useful properties and presentable appearance of vegetables immediately after they are harvested.
Miratorg has mono-vegetables, for example, broccoli, cauliflower, beans, which are the basis of many culinary recipes, as well as vegetable mixtures, among which the most popular are Mexican, Italian, Caribbean, Hawaiian, Vegetables grill".
Experts note that frozen foods contain much more vitamins and minerals than canned and even fresh ones that have lain in a warehouse. Since vitamins are detrimental to air, not cold.
