
The studies were conducted on 16 indicators, including tests for drug residues, microbiological parameters and prohibited food additives. Laboratory tests showed the presence of salmonella in the semi-finished meat-based product for cutlets. This indicates possible violations of the technological process, storage conditions or transportation of products.
The detected batch was found to be non-compliant with the requirements of the technical regulations "On the safety of food products" and "On the safety of MEAT and meat products". Information about the detected cases was entered into the automated veterinary control system "Vesta" and transferred to the Primorsky Interregional Administration of ROSSELKHOZNADZOR for further action. it should be noted that salmonella can persist in meat, even in frozen form, and actively multiply in it. Reliable heat treatment is the only method capable of destroying thesebacteria .
