"Saw only markings." The National Academy of Sciences told about the creation of analogues of Chinese sweets from powdered milk

July 28, MINSK . Ksenia Gershonchik, HEAD of the confectionery industry sector of the Scientific and Production Center for Food of the National Academy of Sciences, told reporters about the process of creating analogues of Chinese sweets from pressed MILK powder, BelTA has learned.

Scientists of the Scientific and Production Center for Food, together with specialists from the Belgospischeprom concern and the Kommunarka factory, have produced experimental samples of powdered milk sweets on behalf of ALEXANDER LUKASHENKO. Eight varieties of such sweets were promptly produced on the domestic equipment of one of the enterprises. In total, it took about three weeks from the idea to the creation of the product. During the experiment, various types of raw materials were tested - skimmed, whole milk powder , whey powder, various types of carbohydrates (glucose, lactose, maltodextrin). In addition, carrot, blackcurrant, APPLE , ascorbic acid powder was added to some types of sweets.

Scientists have created an analogue of sweets, seeing only the markings of Chinese products. "Original Chinese sweets are presented in a very wide range. We tried and studied them. In these sweets, the content of powdered milk is from 15% to 85%. Our sweets are close to analogues. I think that the Belarusian consumer, including children, will like them, - Ksenia Gershonchik said. "It was found that skimmed milk powder has better flowability. The particle size distribution, particle size of the feedstock, its moisture content were also important. Many factors affect the final result."

The presented sweets are part of an experimental batch at the experimental facility. “We have studied how technologically advanced raw materials are and are suitable for the production of such products, because such studies have not been carried out in Belarus before,” the specialist noted.

So far, sweets have been released only in tablet form. Analogues are produced this way because of the milk powder pressing procedure. "In order to use another technology, for example, involving the boiling process, milk powder must be dissolved and other operations performed. These will be different sweets. Dairy products are widely used in the confectionery industry, but their content does not exceed an average of 20%. In the case of sweets from 85% of pressed milk powder can be achieved, i.e. these are initially different properties of the product. This is the maximum task that we want to reach," Ksenia Gershonchik shared her plans.

According to her, the creation of a recipe can take 2-3 months. "In order to organize the release of these sweets, it is necessary to develop technical specifications and recipes for technological instructions. Coordination is required in third-party organizations. In addition, equipment is needed for the production of such sweets, but now it is not available at the country's confectionery enterprises. We will wait for it. After the launch, of course, it will be necessary to work out the recipe on the existing production line," the specialist said.

The Ministry of HEALTH will issue recommendations on the optimal amount of consumption of these sweets. “It is necessary for people to understand how much a child can eat how much candy. For us, this is not a novelty. We have a norm for the consumption of high-calorie confectionery products, which is 100 kilocalories per serving. calcium, proteins, fats, so that there is no excess consumption," Ksenia Gershonchik noted. "The Ministry of Health will also set expiration and storage dates. It will be necessary to develop an experimental batch on existing equipment. We will set a minimum shelf life, and then the Ministry of Health will conduct studies of safety indicators at certain intervals."

The President of Belarus has set a task to establish mass production of Belarusian sweets according to the Chinese recipe by the end of this year.
