The main periodical of the Yamalo-Nenets Autonomous Okrug, Krasny Sever, reports that in 2020, one of the oldest agricultural enterprises on the peninsula, the Baidaratsky state farm, began producing hand-made dumplings stuffed with venison.
Now the novelty is in high demand in the stores of Beloyarsk and Aksarka, and in the near future it will appear on the specialized market "Dary Yamal" in Salekhard.
The venison deep processing workshop, established at the Bely Yar camp in the Krasnoselkupsky district of the Yamal-Nenets Autonomous Okrug, produced 27 tons of sausages and semi-finished MEAT products last year. Especially popular among the local population are the boiled sausage "Pryanaya", the half-smoked sausage "Tuymada", the half-smoked sausages "Hunting" and the boiled-smoked fillet of reindeer meat. In the manufacture of sausages, soy and any other vegetable fillers that increase the volume of valuable minced meat are not used. They include only Yamal venison, pork and natural spices.
Vladimir Artsybashev, General DIRECTOR of State Farm Baidaratsky JSC, said that the demand for venison dumplings exceeded expectations, so this production line is operating at full capacity.
In addition to venison products, the Baidaratsky state farm produces ice cream, bread and pastries. Recently, he began to produce natural yoghurts with various fillings. He supplies fresh produce to the local kindergarten and boarding school.
