The website of the All-Russian Union of Consumers "Roskontrol" published the results of a study of seven brands of Brunswick sausage. Expert center specialists set out to find out if among the samples there is a product manufactured in accordance with GOST R 55456-2013, as it was written on the labels.
For research in ordinary retail stores, they bought Braunschweigskaya raw smoked sausage, produced under the trademarks Velcom, Dymov, Klinsky, Malakhovsky, Outskirts, Ostankino, Rublevsky.
The samples were tested in the laboratories of the country's leading research centers for more than 50 parameters, including the composition of raw materials, the presence of foreign DNA and genetically modified components (GMOs).
As a result, during the examination of the Braunschweig sausage from the Malakhovsky brand line, it was found out that soy protein granules are present in its composition in a moderate amount, but the Moscow region manufacturer did not indicate soy when labeling.
Sausages under the brands "Malakhovsky", "Ostankino", "Dymov" and "Outskirts" lacked fat. In all samples, with the exception of the "Braunschweig" trade marks "Velcom" and "Klinskoy", an increased protein content was determined (within the framework of GOST).
A large amount of hydroxyproline in the product under the Rublevsky brand indicates an excess of connective tissue in the raw material: it is this amino acid that stiffens the defective collagen protein molecule.
A preservative, sorbic acid, was found in the semi-dry sausage of the Malakhovsky trademark.
In the final material of Roskontrol, it was noted that all samples met the requirements for the quality and safety of sausages. Nevertheless, the product under the Malakhovsky brand was blacklisted due to deviations from GOST and the classic Braunschweig sausage recipe. The remaining six were included in the list of goods with comments.
