According to data published by the Consorcio del Jamon Serrano Espanol (CJSE), Spanish Serrano (Jamon) ham exports increased by 13.7% last year. Last year, 53,507.16 tons were exported for a total amount of more than 528 million euros (+14.62%). 2021 was the year of the final recovery, notes Carlos del Hoyo, DIRECTOR of Marketing and Promotion for CJSE.

The average price for this period increased by 0.81% and amounted to 9.87 euros. In the European Union, it amounted to 8.94 euros compared to 12.42 euros in third countries, which resulted in a slight adjustment of 0.15% and 0.39%, respectively. This adjustment has taken place in some important markets where import volumes have rebounded on the back of a lower average price.

In global figures, countries in the European Union imported a total of 39,072.76 tons of ham, representing 73% of Spanish cured ham exports. In the EU, Germany, France, Portugal, Italy, Belgium, Austria, Denmark and Sweden were the main markets for Jamon Serrano. Sweden is the European Union market with the highest price, €12.95/kg, followed by Denmark, €11.41/kg.

On the other hand, the third countries that showed more significant growth in value terms were CHINA (74.69%), Chile (72.76%) and the usa (33.19%). According to the CJSE, this latter market "has become a major destination for cured ham outside the European Union, setting monthly EXPORT records, and CJSE predicts it will become one of the most important markets in 2022."
