The MEAT processing market    in 2023, in terms of the number of producers, has recovered to pre-Covid levels. Production of all types of meat has increased. Recently, the market for meat and fish products has seen an increase in the number of farms and small processing enterprises, as well as a growing number of producers of semi-finished products. The range of meat and fish products is expanding.

The purpose of the Festival is to identify and promote the best products in terms of environmental safety and consumer properties, to increase the competitiveness of enterprises that are actually responsible for the high, stable quality of their work. Constant confirmation of the high quality of products at annual Quality Festivals can serve as the best guide for buyers when choosing products in the trading floors.

Product evaluation at the quality competition was carried out by an interdepartmental jury, which included highly qualified professionals: specialists from the Ministry of Agro-Industrial Complex and Consumer Market of the Sverdlovsk Region, the Yekaterinburg City Administration, the Yekaterinburg Municipal Center for Consumer Protection, Rospotrebnadzor authorities, FBU "Uraltest", the Ural Chamber of Commerce and Industry, USUE, Yekaterinburg College of Trade and Economics, merchandise experts from large retail chains and representatives of enterprises participating in the Quality Festival.

At the twenty-third annual Quality Festival, 86 samples of products from Yekaterinburg and the Sverdlovsk region, the Samara region, and the Republic of Bashkortostan were exhibited. When assessing the quality of sausage and deli meat products, organoleptic indicators were taken into account: appearance, consistency, smell, taste; for semi-finished meat products, additionally - the type of minced meat on the cut and juiciness. The quality of fish products was assessed according to the following indicators: appearance, consistency, smell, taste.

A qualified jury determined the best products and manufacturers.

In the nomination “Sausages and sausages”, II degree diplomas were awarded to: “Beef” sausages, “Muslim” and “Dairy” sausages produced by Bashkir Sausages Meat Processing Plant LLC (Sibay, Republic of Bashkortostan), “Ham” sausages produced by Novouralsky LLC meat yard" (Sverdlovsk region), "Dairy" sausages produced in the Uralmeat processing plant "SIBAGRO" (JSC Food Plant "Good Taste", Yekaterinburg).

In the “Boiled Sausages” category, 1st degree diplomas were awarded to the “Lyubitelskaya” GOST sausage produced by PC Factory of Quality LLC (Tolyatti, Samara Region) and the “Doctorskaya” sausage produced by LLC “ Meat Processing Plant  Bashkir Sausages” (Sibay, Bashkortostan). ).

Diplomas of the 2nd degree were awarded to the “Doctorskaya” sausage produced by the Ural meat processing plant “SIBAGRO” (JSC Good Taste Food Processing Plant, Yekaterinburg), the “Doctorskaya” sausage produced by LLC “Samara Meat Processing Plant “Garibaldi” (Samara), and the “Beef” sausage » produced by LLC “Meat Processing Plant Bashkir Sausages” (Sibay, Republic of Bashkortostan).

In the nomination “Ham Products from Poultry Meat”, the 1st degree diploma was awarded to the ham product from broiler chicken meat “Buzhenina Chicken” produced by Foodtrade LLC (TS Hyperbola, Yekaterinburg).

In the “Ham Products” category, the 1st degree diploma was awarded to the “Firmennaya” ham produced by the Ural meat processing plant “SIBAGRO” (JSC Food Plant “Good Taste”, Yekaterinburg). The 2nd degree diploma was awarded to the Marble ham produced by Bashkir Sausages Meat Processing Plant LLC (Sibay, Republic of Bashkortostan).

In the category “Meat pates”, the first degree diploma was awarded to  “ Baked pork and beef liver pate” produced by Samara Meat Processing Plant “Garibaldi” LLC (Samara).

In the category “Canned Meat”, the 1st degree diploma was awarded to premium stewed beef produced by LLC “PK Factory of Quality” (Tolyatti, Samara Region)

In the nomination “Boiled-Smoked Sausages”, the 1st degree diploma was awarded to the “Servelat GOST” sausage produced by LLC “Bashkir Sausages Meat Processing Plant” (Sibay, Republic of Bashkortostan).

Second degree diplomas were awarded to Cervelat “Uspensky” produced by Foodtrade LLC (TS “Giperbola”, Yekaterinburg) and Cervelat “Sibaisky” produced by LLC “Meat Processing Plant Bashkir Sausages” (Sibay, Republic of Bashkortostan).

In the nomination “Semi-smoked sausages”, a 1st degree diploma was awarded to Cervelat “Four Cheeses” produced by Novouralsky Meat Dvor LLC (Sverdlovsk Region).

In the category “Gourmet poultry products”, “Dry-cured turkey” produced by LLC Fudtrade (TS Hyperbola, Yekaterinburg) and the delicacies “Chicken roll” boiled-smoked, “Buzhenina chicken” received high marks from all members of the jury and diplomas of the 1st degree. and “Stuffed broiler chicken wings,” smoked and baked, produced by Novouralsky Meat Dvor LLC (Sverdlovsk region). Diplomas of the 2nd degree were awarded to “Chicken roll” and “Boiled-smoked duck” produced by Foodtrade LLC (TS “Hyperbola”, Yekaterinburg), and the delicacy “Lantern” made from broiler chicken meat produced by Novouralsky Myasnoy Dvor LLC (Sverdlovsk region).

In the nomination “Gourmet Products Made from Pork and Beef” the delicacies “Basturma” produced by LLC “PK Factory of Quality” (Tolyatti, Samara Region) and Baked Lard “Belorusskoe” produced by LLC “MPK Brusyansky” ( Sverdlovsk region), “Ham with spices” produced by Foodtrade LLC (TS Hyperbola, Yekaterinburg) and pork delicacies produced by the Ural meat processing plant “SIBAGRO” - Cossack appetizer “Smalets”, Balyk “Stolichny”, “Bristinka” boiled-smoked and “Tenderloin”, raw smoked.

In the category “Uncooked smoked sausages”, well-deserved recognition, high scores and 1st degree diplomas were awarded to the Braunschweigskaya sausage produced by PK Factory of Quality LLC (Tolyatti, Samara region) and the Valencia sausage produced by the Ural Meat Processing Plant. SIBAGRO" (JSC Food Plant "Good Taste", Yekaterinburg).

The 2nd degree diploma was awarded to “Chebureks with meat and cabbage” produced by Keiterinburg LLC, Verkhnesaldinsky branch (Sverdlovsk region).

 In the nomination “Semi-finished products, frozen in dough, stuffed with poultry meat (dumplings)”, the 1st degree diploma was awarded to Mantams with turkey produced by Samara Meat Processing Plant “Garibaldi” LLC (Samara). The 2nd degree diploma was awarded to poultry dumplings produced by Keiterinburg LLC, Verkhnesaldinsky branch (Sverdlovsk region).

In the nomination “Semi-finished products frozen in dough, with fish filling (dumplings)”, the 1st degree diploma was awarded to Murmansk trout dumplings with cream cheese (and mushroom butter) produced by the “Live Fish” Shop, IP Popov A.V. (Yekaterinburg city).

 In the nomination “Semi-finished products with meat filling, frozen in dough, hand-made (dumplings)” the first degree diplomas were awarded to: “Pork” dumplings, “Classic” dumplings produced by LLC “Pelmeshki from Petrovna” (Kurganovo village, Sverdlovsk region) and Khinkali “ Georgian" produced by MPK Brusyansky LLC (Sverdlovsk region).

Diplomas of the 2nd degree were awarded to : Manty and Dumplings “Homemade” produced by LLC “Pelmeshki from Petrovny” (Kurganovo village, Sverdlovsk region), dumplings “Brusyanskie” produced by LLC “MPK Brusyansky” (Sverdlovsk region), Ravioli “Delicious” and Khinkali “Sochi” » produced by Samara Meat Processing Plant Garibaldi LLC (Samara).

In the nomination “Semi-finished products with meat-containing filling, frozen in dough (dumplings, dumplings)”, 1st degree diplomas were awarded to “Farmer” dumplings produced by Novouralsky Myasnoy Dvor LLC (Sverdlovsk Region).  The Meat and Cabbage dumplings produced by Pelmeshki ot Petrovny LLC (Kurganovo village, Sverdlovsk region) were awarded a second degree diploma .

This year, members of the tasting commission highly appreciated all the quality samples of fish products submitted to the competition.

In the “Salted Fish ” category, first degree diplomas were awarded to: Gutted mackerel produced by Foodtrade LLC (TS “Giperbola”, Yekaterinburg), Lightly salted herring fillet in wine sauce “Po-BOYARSKI”, Lightly salted Ivasi fillet with white pepper and mustard seed “Po” -BOYARski" produced by TC "Boyar" (Nizhny Tagil, Sverdlovsk region), Lightly salted salmon with orange produced by "Live Fish" Shop, IP Popov A.V. (Yekaterinburg city).

In the nomination “Hot smoked fish”, first degree diplomas were awarded to: Assorted “Hot smoked squid-salmon “BOYAR style” and Roll “Pink salmon - hot smoked mackerel “BOYAR style” produced by TC “Boyar” (Nizhny Tagil, Sverdlovsk region ), Gutted mackerel produced by Foodtrade LLC (TS "Gyperbola", Yekaterinburg), as well as samples of hot smoked fish Seabass, Halibut, Cheer produced by the Live Fish Shop, IP Popov A.V. (Yekaterinburg city).

In the nomination “Cold smoked fish”, first degree diplomas were awarded to: Atlantic headless mackerel, smoked “Boyar style” and Sockeye fillet “Yukola” smoked “Boyar style” produced by TC “Boyar” (Nizhny Tagil, Sverdlovsk region), Gutted mackerel produced LLC Foodtrade (TS "Hyperbola", Yekaterinburg), Loin tuna produced by "Live Fish" Shop, IP Popov A.V. (Yekaterinburg city).

In the “ Seafood” category, hot smoked mussels “BOYAR style” and lightly salted mussels in oil “BOYAR style” produced by TC “Boyar” (Nizhny Tagil, Sverdlovsk region) received high scores from all members of the jury and first degree diplomas .

Meat producers showed very good results at the Quality Festival. it is especially pleasant that manufacturers are returning to producing products in accordance with GOST. Local enterprises producing fish products showed high quality products and demonstrated a wide range. The organizers of the Festival hope that all products awarded with diplomas from the Quality Festival will take their rightful place on the shelves of stores in the city of Yekaterinburg and the Sverdlovsk region.
